Vegetable medley from the garden

There really is nothing like picking vegetables from the backyard garden, preparing them simply and roasting them over flame. Yesterday, we harvested the first what I’m sure will be many more zucchinis, and enough green beans for two servings (there’s lots more out there). A couple weeks ago, we also pulled a couple dozen onions of various types and set them to cure on wire shelves in the sunroom.

There’s really not much to this recipe. I trimmed the zucchini and cut it lengthwise into four planks. I whisked together the juice of one lemon, the same amount of extra-virgin olive oil, a 1/2 tsp. of Penzey’s Minced Garlic, a pinch of cayenne, a big pinch of sugar, and salt and pepper for a quick marinade. I also sliced a small homegrown red onion and trimmed the green beans.

Dan sprinkled Paul Prudhomme’s Blackened Redfish Seasoning on two tuna steaks and took everything out to the grill. We have this handy grilling wok that makes it easy to grill small pieces of food like cut vegetables.

After everything was grilled, we tossed the vegetables with the rest of the marinade.

Thursday Night Smackdown: Grilling

Labor Day this year was absolutely gorgeous, sunny and warm, and we just took it easy. We had played poker with Danny and Sally, Paul and Terry, and Steve and Katie on Sunday evening, which was a lot of fun, and then Monday we just … basked in the sun and pulled a few weeds from the veggie garden. Then I remembered to take the ribs out, put a rub on them, and stash them back in the fridge for a few hours.

Then we put them on the grill, and about an hour and a half later, this is what we found:

Mmm, mmm, good 🙂 Some time back, I made a batch of Neelys’ Dry Rub (from Food Network’s “Down Home with the Neelys,” which I don’t actually watch, but I figure they know their BBQ) for some baby back ribs; I’m pretty sure I made a third of the recipe, since there’s only the two of us. We still had some in the cupboard, so at about noon, I put a nice, thick layer on the spare ribs and put them back in the fridge to get spicy. Then Dan started grilling around 5:30 and dinner was ready by shortly after 7. These were so good, we will have to do them again … and again … He says they were made with luuuuuv, which is why they were so delicious. I’ll take his word for it.

Grilled Spare Ribs
Neelys’ Dry Rub:
1 1/2 cups paprika
3/4 cup sugar
3 3/4 tablespoons onion powder

4 lbs. pork spare ribs
1/2 cup of your favorite barbecue sauce, plus more for serving (because I like a *lot* of sauce)

Put the rub ingredients in a container with a lid and shake to combine. Sprinkle a good coating on the ribs, put in a gallon-size plastic zip-top bag, and refrigerate at least 4 hours. Grill for about 90 minutes. Brush with sauce for the last 10-15 minutes of grilling. Serve with extra sauce, if you’re a sauce fiend like me 🙂

Tasty Tools: Basting Brush

We had a really delicious dinner last weekend – grilled romaine, tuna and peaches. Yum, yum and yum 🙂

It fits in perfectly with Joelen’s food blogging event Tasty Tools – the theme this month is Basting Brush, and of course, you need to oil up most foods before grilling them, so they don’t burn or stick to the grill grates. So here’s Dan ready to take the food out to the grill:

This really doesn’t even require a recipe. For two servings, cut one romaine heart in half, keeping the root end intact, to prevent it from falling apart. Cut a ripe peach in half and remove the pit. Sprinkle the about 8 oz. of fresh tuna with Paul Prudhomme’s Blackening Seasoning (we didn’t really have enough – time to get some more), and brush it and the romaine and peaches with olive oil. Then, while Dan was grilling, I made a balsamic vinegar reduction – took about 1/3 cup balsamic vinegar, brought it to a boil in a small saucepan, and simmered till it was reduced by half.

Then we cut up the tuna, put it on top of the romaine and topped that with salad dressing – Italian for me and bleu cheese for Dan. We drizzled the balsamic reduction over the peaches and that was dinner. As I said – yum, yum and yum 🙂
